Our olive oil

Committed to sustainability, we have always nourished ourselves primarily with local products, sourced from the land where we reside. Our olive oil was born from this idea: a small number of carefully tended plants produce a superior category olive oil, obtained directly from our olives at www.trullosaraceno.it and solely via cold pressing.

To achieve a higher quality oil, we initiate an early harvest, avoiding the fermentation of the collected olives which are treated as fruit, meaning they are harvested from the tree rather than from the ground.

The sharp and slightly bitter flavour is given thanks to the presence of substances such as polyphenols, molecules with antioxidant properties, which are characteristic of quality for a considerable organic oil.

Extra virgin olive oil is an essential part of the Mediterranean diet, recognised by UNESCO as Intangible Cultural Heritage of Humanity since 2010.
